Let me tell you about my new favourite sweet treat! I got the recipe off Gillian, who got it off Ange.
I was after something a bit different other than my usual liquorice or rice pudding to eat before a run, and this hit the spot nicely!
I made these last night and took a few squares to work today, and ate most of them before lunch (whoops!) - they were so good !!!
Oh She Glows Peanut Butter Granola Bars
3/4 cup brown rice syrup
1/4 cup peanut butter
1.5 cups rolled oats
1/4 c ground flaxseed
1/4 cup hulled hemp seeds
1/4 c sesame seeds * I didn't have enough so only put in about 2 tablespoons, which left it a little moist, but I liked that! Otherwise you could make up the bulk with extra oats
3/4 cup unsweetened coconut
1 t vanilla * I didn't have any so left it out
2 T natural cane sugar *I used brown sugar, and you could probably leave this out
Heat brown rice syrup, vanilla, sugar, and peanut butter over low to medium heat. Bring to a boil, stirring frequently, and then set to low. Be careful because it burns easily. In a large bowl, stir together dry ingredients. Add brown rice syrup mixture to dry mixture and stir very well. Spread into a 9×9 inch baking dish and simply leave at room temperature to harden up (I left mine overnight). Cut into bars and enjoy!!
As mine was still lovely and moist in the morning, I think you could also roll the mixture into little balls and then into sesame seeds. If you have kids I'm sure they'd love to help you do this :)
This is a great pre exercise snack and a tiny wedge with a cup of tea after dinner didn't go astray either ;)
I found that my training run this evening was very strong and well fuelled. I felt fabulous.
There's actually some Green and Black's chocolate in the house at the moment, but I went straight for this!! It tastes like the sesame seed bars I used to eat as a kid. Nice taste of nostalgia!
