meal plan monday



Happy Monday everyone! I thought I'd share this week's meal plan with you. We usually do our groceries on a Friday, when it's not as crowded at our nearest Sainsbury's (though the colourful locals do still come out to play, LOL) and it means we can have a sleep in on Saturday! So here's what we had on the weekend and our plans for the rest of the week:

Friday
Tandoori chickpea pizza - got the idea from Lisa (thanks Lisa!!)


It had mango chutney, pasatta, spinach, tandoori chickpeas, yellow pepper, coriander, mozzarella and natural yoghurt.

It was so yummy! We used a ciabatta bread as the base instead of getting a pizza base or using a pitta bread, for a change.

Saturday
We stayed late at a birthday party and ended up getting Chinese takeaway from the place up the road! I had the Monastry Tofu Feast and Tom had tofu, eggplant and zuchinni in chilli blackbean sauce. I loved mine! It had lots of brocolli in it.

Sunday
Grilled tofu with peanut sauce, brocolli and brown rice


Oh god, this sauce is so good!!!

I had been out to the Lanesborough for afternoon tea with my editor (the things you have to do, LOL) so we had this fairly late and just were in the mood for something light and wholesome. Hit the spot!!

Monday (tonight)
Pearl barley risotto with tomato and garlic (feta on the side for Tom!) [he's not wild about feta]

I make it from this recipe. Pearl barley is a delicious alternative to risotto rice - and so cheap! 39p for a giant bag of it!

UPDATE 9:36PM - ended up ditching this one because we had brown rice leftovers for lunch and didn't fancy it! Had baked potatoes with homemade hummous and a huge salad instead.

Tuesday
Dinner with a friend - she's cooking! :D

Wednesday
Spicy mixed bean pasta

This is a recipe submitted to my work's charity cook book project, which I'm helping to manage this year. It's right up my alley! I've even got someone from Masterchef UK involved, which I'm pretty stoked with! This one sounds very yummy, so I'm going to "test" it and photograph the results for the book.

Thursday
Girls night in - I haven't decided what I'll make yet. Maybe another salad that talks to me? :)

  1. I love sitting and planning out my meals for the week! I'm trying to use up cupboard and freezer ingredients as its the week before payday! I'm thinking of making a nice chilli later in the week and perhaps a chicken stir fry. I'm also introducing an anything goes night so I can take advantage of the random things in the discount section at sainbos!

  2. Oh I love the "anything goes" nights!! I'm actually now tossing up if I want barley risotto tonight as I had brown rice for lunch......

  3. I try to plan the eats. Lately I've been trying to add in an unfamiliar ingredient or recipe into the weekly plan.
    I just tried cooking tofu for the first time, who knew it was so easy? And tasty, if I say so myself :)

    Long time no chat! Hey have you looked into Tofu from a health perspective at all? You seem to eat it quite often so it may pay to. It can have a significant impact on your hormone balance etc. Can be a real problem for men but also for women. Hope that doesn't bum you out too much! I know you love it. Its a big problem in Singapore where people also drink soy milk instead of alternatives.

    I've got my meals planned out for this week. I started a 12 week plan with Michelle Bridges this week so I planned out my meals this week.

    I have been taking photos too. Might post them at the end of the week :-)

    How good is home cooking, especially when someone else does it! hehehe

  6. Hello Phil! I have really enjoyed reading your blog. I am also a meal planner. I usually sit down on Friday evening or Saturday morning and plan my food for the whole week. I am a big fan of trying new things every week as well so you never get the chance to get bored.

  7. ooh i've had that Ottolenghi barley recipe on my COOK ME list for ages so defo going to give it a go now i know it's been reliably tested, hehe. go feta!

    Liz, I have thought about the health issues with soy and was worried for a while, but I had a hormone test recently and it was all clear, all my levels were fine so I think as long as I moderate my intake I'm ok. This is not a typical week for us though, we usually have tofu once a month or every three weeks. It's a handy takeaway fallback though, I must say! I have thought about replacing soy milk with rice milk and seeing how I go...but I suspect I might hate that in tea! Thank you for bringing this to my attention - it doesn't bum me out at all, too much of anything is never a good thing :)

    Shauna, the tandoori chickpeas were easy - I just mixed a can of drained chickpeas with the dregs of my tandoori curry paste when I got in from work and left it to marinate for a few hours while we did the grocery shopping, etc. If you can't get tandoori paste you could use tikka masala or balti.

    And yeah, you've got to give the barley risotto a go, it's magic! Especially with the feta :D

Like Chan, I am doing the 12wbt so to ensure that we smashed it out and stuck to our calories for each day, we worked out individual menus and I have been cooking for the family and getting some great reviews. The Thai Pumpkin Soup, and tonights Thai Pork Salad both got the thumbs up. And I just realised both dishes are Thai - lol. Love your pizza on the cabiatta roll idea - will have to try that. x

  11. I haven't planned any dinner meals this week - But I did steam up veggies on Sunday for my lunches every day this week. Add a tin of tuna or some chicken & a beautiful healthy lunch! (lunches tend to be my downfall!!)

    I'm not so bad for dinners, I usually got my freezer well stocked with home made curries & pasta sauces for nights I can't be bothered & we've always got salad & veggies.

  13. Mmmm reading this has made me hungry! I'm not good at planning a day, let alone a week ahead. However this soup has been on my mind all week, so I'm planning on cooking it up tomorrow. Yum!
